No-Bake Brownies [V + GF]

Who wants brownies? Well THESE are not only deliciously rich but they require no baking so they take practically no time at all! Really, you can whip up a batch of these babies to satisfy a sweet craving in just 20 minutes!

Did I mention these No-Bake Brownies are vegan, gluten-free and absolutely soooo rich and chocolatey? They also have ZERO added sugars!

If I haven’t sold you yet, I guess you’ll just have to make a batch and try these bad boys out for yourself!😜

No-Bake Brownies [V + GF]

Prep time: 20 minutes

Total time: 20 minutes

Yield: 8 servings


Food processor (see mine!)
Square baking pan
Wax paper
Magic Bullet


For the brownies:
1 cup walnuts
1 cup pecans
1/2 cup cocoa powder
1/4 tsp sea salt
2 Tbsp coconut oil
1 cup dates

For the topping:
1/4 cup coconut oil
1/4 cup cocoa powder
3 Tbsp coconut milk

Cacao nibs


  1. Add walnuts and pecans to the bowl of your food processor. Process on high until nuts are finely chopped.
  2. Then add cocoa and sea salt and process until they are mixed in.
  3. Add coconut oil and dates. Process on high and scrape sides if needed. Poke the mix with your spatula to ensure there are no remaining chunks.
  4. Once the mix is smooth, use your spatula to transfer to a wax paper-lined square baking pan.
  5. Use clean hands to press the mix down, solidifying its shape.
  6. For the ganache: blend all ingredients, scraping as necessary. I used my magic bullet because it’s small and good for preparing small batches.
  7. When the ganache is smooth, pour it on top of the brownies and spread it out in an even layer. Sprinkle with cacao nibs and place in the freezer for 30 minutes to chill and set.
