Raw Cookie Dough Energy Bites [V+GF]

Total time: 20 minutes

Yield: 15 bites

Equipment

Food processor (see mine!)
Spatula

Ingredients

2 cups gluten-free oats
1/2 cup coconut flakes
2 Tbsp maca powder
2 Tbsp coconut oil
1/4 cup cashew butter
1/4 cup Earth Balance
1/4 tsp sea salt
1 Tbsp vanilla
Enjoy Life mini chocolate chips to preference

Instructions

  1. Place oats and coconut flakes in the bowl of your food processor. Process on high until oats are reduced to a rough flour. Some chunks are okay!
  2. Add maca powder and pulse until it is evenly mixed in.
  3. Add coconut oil, cashew butter, and Earth Balance butter. Process on high until all ingredients are thoroughly incorporated. Use a spatula to break up any ingredient lumps if necessary.
  4. Pour in sea salt and vanilla and process on high until they are a part of the dough.
  5. Remove the bowl of your food processor from the base and retrieve the blade. Set aside.
  6. Pour chocolate chips into the mix and use your spatula to stir them in.
  7. With clean hands, roll mix into 1″ balls. Store in the fridge for up to two weeks. Freeze indefinitely. Enjoy!
