Crisp Green Smoothie

I made this smoothie the other morning after overindulging in the gluten-free chocolate cake at my nephew’s party the night before. It was a great detox green drink that made for a fantastic light breakfast!

I love this smoothie because it has tons of veggies but they aren’t very apparent to your tastebuds. Even though it contains such a slight amount of lemonade, this smoothie tastes like a glass of refreshing lemonade with a few crisp cucumber slices. This smoothie would definitely be a great way to sneak some vegetables into a child’s diet.

Crisp Green Smoothie

Prep time: 5 minutes

Total time: 5 minutes

Yield: 1 serving

Blender (see mine!)

1/2 cup pea shoots
1 celery stalk
1 mini cucumber
1 previously peeled and frozen banana
4 to 6 chunks frozen pineapple
1/4 cup lemonade
1/4 cup water

Optional: 1 Tbsp chia gel**

  1. Wash celery and cucumber. Cut off ends and roughly chop cucumber.
  2. Add all of the ingredients EXCEPT chia to your blender and blend until consistency is smooth!
  3. Pour into serving glass or bowl and mix in chia gel. Enjoy!

**To make a basic chia gel: use a 6:1 ratio. So combine 1 Tbsp chia seeds and 6 Tbsp water. Stir. Store in the fridge until ready for use. The longer your seeds soak, the better the consistency. Overnight is ideal but a “quick version” is acceptable if you need them in a hurry.
