Saucy Squash Skillet

Need a quick and easy dinner that requires next to no effort but tastes like it been simmering for hours? This no-skill skillet is for you!

This Saucy Squash Skillet is essentially a low-carb plant-based alternative to baked pasta. Yes, its oaky if you’re drooling.

The combination of the veggies and squash mixed with my Homemade Chunky Tomato Sauce is A1. How could the though of that not make you ready for dinner?

Enough talk, let’s get to it! Make the Spaghetti Squash and Tomato Sauce ahead of time for a quick and easy meal that’s sure to leave you satisfied! Happy cooking!

Saucy Squash Skillet

Prep time: 5 minutes

Cook time: 20 minutes

Total time: 25 minutes

Yield: 2 servings


Oven-safe skillet (see mine!)


1 tsp coconut oil
1/2 zucchini, chopped
1/2 onion, chopped
1 leaf kale, hand shredded and stem discarded
1 cup cooked spaghetti squash (about 1/4 large squash)
1/2 cup Homemade Chunky Tomato Sauce

Optional toppings:
Nutritional yeast


  1. Melt coconut oil in saucepan over low heat. Preheat oven to 500°F.
  2. Once oil is melted, add chopped zucchini, onions, and kale. Sauté veggies until they are slightly browned.
  3. Push veggies to one half of pan and add squash to the other. Allow to cook for a few minutes before topping spaghetti squash with tomato sauce.
  4. Place skillet in the oven to broil for 10 minutes. Remove with an oven mitt and serve. Enjoy!
