Seedy Superfood French Toast [GF + DF]

Equipment

Wide shallow bowl
Fork
Large pan
Spatula
Sharp knife

Ingredients

2 eggs
1/2 tsp vanilla
1/2 tsp ground cinnamon
1/2 tsp hemp hearts
1/2 tsp milled flax seeds
1 tsp chia seeds
2 pieces gluten-free bread
1 Tbsp coconut oil

Optional toppings:
Fresh/frozen/dried fruit
Maple syrup
Granola
Nuts
Coconut
Chocolate chips

Instructions

  1. Crack eggs into a wide shallow bowl and discard shells. Use a fork to whisk as if you are preparing scrambled eggs.
  2. Add vanilla, cinnamon and all seeds to the bowl. Use your fork to whisk in and mix together.
  3. Place one piece of bread in the bowl to marinate in the egg mixture. Set aside and heat coconut oil in a large pan over low heat. Flip bread with the fork, so both sides absorb egg.
  4. Once oil is melted, increase heat to medium and add the saturated slice of bread to the pan. Let bread cook until the face-down side is golden. In the meantime, add another slice of bread to the egg mixture, flipping after a minute or so.
  5. Use a spatula to flip the toast in the pan so the raw side is face down. Allow to cook until this achieves the same golden hue.
  6. Once saturated in the egg mix, add the raw bread to the pan alongside the other piece and cook with the same method.
  7. Remove from pan, plate your toast and add your toppings of choice. Enjoy!😊
