Drunken Chicken [GF + DF]

Who here loves Mexican food?🙋This gal is ALWAYS down for a taco, fajita, or burrito. Arrrrriba!

And don’t forget about my Enchiladas Verdes [GF + DF]. Those babies hold the key to my heart. Come to think of it, the verde sauce would be absolutely delicious served with this recipe.

So what goes better with any of these Mexican delicacies than tequila?💃🏾Nothing, no sir! That’s why this Tequila Chicken’s got it all…the tequila, the chicken and the lime!

This has to be one of the easiest recipes because (like all the best) it’s done completely in the crockpot, making it practically effortless and for an easy cleanup!

So take 5 minutes in the morning to throw the ingredients into your crockpot and then come back to a dinner ready to go! Easiest meal prep EVER!



Tequila Chicken [GF + DF]

Prep time: 5 minutes

Cook time: 5 hours

Total time: 5 hours + 5 minutes

Equipment

Small crockpot
Tongs

2 glass quart-sized jars

Ingredients

2 frozen boneless chicken breasts
1/2 cup vegetable scrap stock
1/4 cup silver tequila
3 Tbsp lime juice
Juice of one orange
2 garlic cloves, peeled
1 Tbsp dried parsley
1/2 tsp taco seasoning*

Instructions

  1. Place chicken breasts in your crockpot. Add remaining ingredients and use tongs to mix so all sides of the breasts are well covered and the parsley is dispersed.
  2. Cover and set the crock to low power. Cook for 5 hours.
  3. After 5 hours, turn off the crockpot and use your tongs to shred the breasts. The chicken should be tender enough to make this process effortless.
  4. Mix the shredded chicken and cover until ready to serve. Serve over spaghetti squash, cauliflower rice or add to your favorite buddha bowl!
